2 pounds ground beef 1 cup bread crumbs 1 egg, beaten 1 cup milk 1/2 cup barbecue sauce 1 teaspoon salt 1/2 teaspoon black powder 1/2 teaspoon garlic pepper 3-4 Yellow Onion (med-large) 1 package of bacon Moar barbecue sauce Ina large bowl combine the ground beef, eggs, bread crumbs, 1/2 cup bbq, salt pepper, and garlic powder. Mis together with your hands until thoroughly combined. Cut top and bottom off onion, cut in half and peel off skin. Then seperate the onion into “layers”. Use the larger outside layers. Stuff your Meatloaf mix between two onion layers (essential making an onion seal around a large meatball) Wrap each “bomb” with three slices of bacon and secure with toothpicks . Bake in dish with sides (to catch grease) at 425 for approx 40 minutes, or until internal temperature 165. Add barbecue sauce all over and bake additional 5 minutes!
Here’s a different way to try it from @BL4CKB34RD (Thanks for the suggestion!) Slice and carmalise 1 onion. Mix it into the meat mix. Shape into meatballs and sear in a hot pan. Wrap in bacon and then bake.
